About to build myself and did the same thing. All doors are 2400 x 820 and windows are 2100 x 2400 raised to 2400 high. Aesthetically more pleasing I hope.

2400x820 internal doors will definitely look disproportionate/clumsy.
You either go full height for hidden architrave-less doors or keep them at standard 2050 or in worst case somewhere in the middle e.g.…

I'd agree that having the kitchen where it is in drawing#1 is best to optimise the northern aspect.
The actual design of kitchen #1 is terrible though.

With the top being North, only Option1 makes sense to have an open, bright living area. May be best to have an alfresco adjoining the dining
